Here are 5 traditional recipes made during Bakra Eid, but with a healthier twist!

1. Sheer Khurma (Saffron Milk Pudding)

Ingredients:

* 1 litre low-fat milk
* 1/2 cup vermicelli or seviyan (whole wheat or whole grain)
* 1/4 cup dates, chopped
* 1/4 cup raisins
* 2 tablespoons almonds, slivered
* 2 tablespoons pistachios, chopped
* A pinch of saffron strands (optional)
* 1 tbsp honey
* Cardamom powder for flavoring

Instructions:

1. To make this Bakra Eid speciality, take a non-stick pan and dry roast vermicelli until golden brown.
2. In a separate pot, bring milk to a gentle boil. Add the roasted vermicelli, dates, raisins, saffron, and cardamom powder.
3. Cook on low heat, stirring occasionally, until the vermicelli is cooked and the milk has thickened to a pudding-like consistency.
4. Remove from heat and let it cool slightly. Stir in the honey or sweetener.
5. Garnish with slivered almonds and chopped pistachios. Serve warm or chilled.

2. Shami Kebab (Spiced Meat Patties)

* 500g lean ground chicken or turkey
* 1/2 cup split chickpeas (chana dal), soaked
* 1 small onion, finely chopped
* 2 cloves of garlic, minced
* 1-inch piece of ginger, grated
* 2 green chilies, finely chopped (optional)
* 1 teaspoon cumin powder
* 1 teaspoon coriander powder
* 1/2 teaspoon turmeric powder
* 1 teaspoon garam masala
* Salt to taste
* Fresh coriander leaves, chopped
* Cooking oil for shallow frying

Instructions:

1. Kebabs are perfect for Bakra Eid and to make them, drain the soaked split chickpeas and cook them in boiling water until tender. Drain and set aside.
2. In a food processor, combine the ground chicken, cooked chickpeas, onion, garlic, ginger, green chilies, cumin powder, coriander powder, turmeric powder, garam masala, salt, and fresh coriander leaves.
3. Process until well combined and form into small patties.
4. Heat a non-stick pan with a little cooking oil over medium heat. Continue cooking the patties until they achieve a golden brown color on both sides.
5. Serve the Shami Kebabs with mint chutney or yogurt dip.

3. Mutton Biryani

Ingredients:

* 500g lean mutton, cut into pieces
* 2 cups basmati rice, soaked
* 2 tablespoons olive oil
* 2 onions, thinly sliced
* 2 tomatoes, chopped
* 2 tablespoons plain yogurt
* 2 teaspoons ginger-garlic paste
* 1 teaspoon turmeric powder
* 1 teaspoon red chili powder
* 1 teaspoon cumin powder
* 1 teaspoon garam masala
* A handful of fresh mint leaves, chopped
* A handful of fresh coriander leaves, chopped
* Salt to taste

Instructions:

1. Biryani is one of the most beloved Bakra Eid recipe, heat oil in a large pot. Include the sliced onions in the cooking process and continue until they turn golden brown. Set aside half of the cooked onions for later use as a garnish.
2. In the same pot, add ginger-garlic paste and sauté for a minute. Add the mutton pieces and cook until browned.
3. Add tomatoes, yogurt, turmeric powder, red chili powder, cumin powder, garam masala, mint leaves, coriander leaves, and salt. Stir well to combine.
4. Cover the pot and simmer for about 30 minutes or until the mutton is tender.
5. Meanwhile, cook the soaked rice until it is 70 percent cooked. Drain and set it aside.
6. Layer the partially cooked rice over the mutton in the pot. Cover tightly and cook on low heat for about 20 minutes, allowing the flavors to meld together.
7. Garnish with the reserved fried onions and serve hot with raita or salad.

4. Ma’amoul (Date-Filled Cookies)

Ingredients:

* 2 cups whole wheat flour
* 1/2 cup semolina flour
* 1/2 cup olive oil or melted butter
* 1/2 cup warm water
* 2 tablespoons honey or powdered jaggery
* 1 teaspoon rosewater (optional)
* 1 teaspoon orange blossom water (optional)
* 1 cup date paste
* A pinch of ground cinnamon (optional)
* Powdered sugar for dusting (optional)

Instructions:

1. You can’t celebrate Bakra Eid without this dessert! To make it, combine whole wheat flour, semolina flour, olive oil or melted butter, warm water, honey, rosewater, and orange blossom water in a mixing bowl. Knead until a smooth dough forms.
2. Divide the dough into small portions and shape them into balls.
3. Take one dough ball and flatten it in your palm. Place a small amount of date paste in the center and seal the dough, shaping it into a small cookie.
4. Repeat the process with the remaining dough and date paste.
5. Place the cookies on a baking sheet and bake in a preheated oven at 180°C (350°F) for 15-20 minutes or until golden brown.
6. Sprinkle powdered sugar, if desired. Allow them to cool before serving.

5. Korma (Creamy Yogurt-Based Curry)

Ingredients:

* 500g boneless chicken or lamb, cut into pieces
* 1 cup plain yogurt, whisked
* 2 onions, finely chopped
* 2 tomatoes, pureed
* 2 tablespoons olive oil
* 2 cloves of garlic, minced
* 1-inch piece of ginger, grated
* 1 teaspoon cumin powder
* 1 teaspoon coriander powder
* 1/2 teaspoon turmeric powder
* 1/2 teaspoon red chili powder
* 1/2 teaspoon garam masala
* A handful of fresh coriander leaves, chopped
* Salt to taste

Instructions:

1. Let’s make Korma this Bakra Eid! Heat oil in a large pan. Introduce the chopped onions to the pan and cook them until they reach a golden brown color.
2. Add minced garlic and grated ginger. Sauté for a minute.
3. Add chicken or lamb pieces and cook until browned.
4. Add tomato puree, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
5. Reduce heat and simmer for 10-15 minutes or until the meat is cooked through.
6. Slowly add the whisked yogurt while continuously stirring to prevent curdling.
7. Cook on low heat for another 10 minutes, allowing the flavors to meld together.
8. Sprinkle it with garam masala and fresh coriander leaves before serving.
